Easy, Delicious Paleo Banana Bread

I absolutely love baking paleo-friendly treats for my family and friends (as well as for myself, guilty as charged :). I enjoy the whole process – from taking out the ingredients, to mixing the dough, to finally pulling the beautifully-finished product from the oven (or fridge!). Of course, my tummy is in heaven the whole time – it just knows that a yummy treat is right around the corner.

I didn’t always bake clean…


I started baking when I was around 14 years old and at that time, I would use the pre-packaged brownies or cookies mix from a box – you know the one, where you just add water and a couple eggs, stick it in the oven and then presto – perfect desserts everytime.

Except, they weren’t perfect, were they? They were full of (what I now know to be) awful ingredients, such as:

  • Enriched flour bleached
    • “Enriched” because all of the flour’s original nutrients were stripped away during processing) – it definitely would not be considered a real, whole food ingredient
  • High fructose corn syrup (HFCS)
    • Surprisingly, modern science does not condone the demonization HFCS as much as we would like to think (1, 2, 3). Controversy aside though, it is safe to say that you would be smart to avoid it
  • Patially hydrogentated soybean and/or cottonseed oil
    • i.e. Another term for trans fat – and we all know how great trans fat is for Sick cartoonyour health (that was me being sarcastic – check out references 4, 5). It is so bad for your health that last year the FDA declared trans fat as “no longer generally recognized as safe“. (4) This is a total euphemism, of course, meaning that trans fat seriously messes with your whole body. It has been linked to:
      • Cardiovascular disease, including heart attacks
      • Type II diabetes
      • Memory impairment (5)
  • Artificial flavour… need I say more
  • And many other  ingredients that tried to compensate for the fact that it was a processed product that didn’t taste good without gobs of refined sugar and chemicals.

Since then, I’m happy to say that my palate has become a little more sophisticated and I have become a LOT more knowledgeable about the detrimental effects of processed junk versus the benefits of whole foods (much of my food education came after medical school, believe it or not, as I explain here).

I now cook, bake, eat and thoroughly enjoy food that is minimally processed, organic and all-around healthy. I have come to realize that my body prefers this food too! No more bloating, never-feeling-full-after-a-meal or indigestion.

Additionally, my body can better tell when I’m actually full instead of eating to maximum capacity on food that has empty calories with little nutritional value.

This doesn’t mean that I don’t eat pizza, doughnuts or cheeseburgers – but it does mean that I eat them much less frequently. Junk food

I also make sure to pay attention to how my body feels after eating junk food – the irritable gut, bloating-feeling and energy dips are actually a good thing:

It’s my body telling me that it doesn’t want junk food!

It just takes a while for my brain to catch on 🙂

With this realization, I didn’t want to give up baking or making yummy treats in the kitchen, so a few years ago I switched to making paleo-friendly desserts. And boy, does my tummy love it!

I follow a paleo-ish diet (I still eat organic legumes and some organic brown rice), but more importantly I believe in clean eating – minimally processed, organic food that works with your body – for a healthier, happier and wiser life.

Easy, Delicious Paleo Banana Bread


This paleo banana bread is my go-to goody for when family pop over or I’m visiting a friend’s house. It is such an easy, clean recipe that always delivers a delicious treat everytime!

This recipe is super simple to make, nothing delicate about it at all, which suits me just fine. Mash those bananas, beat those eggs, throw everything in a bowl and mix. Bake in the oven and then voila – banana bread à la paleo: Warm, delicous, moist banana bread ready to impress your friends, family and spouse! The kids will never know that this bread doesn’t have any white flour, gluten, refined sugar or processed junk!

Easy, Delicious Paleo Banana Bread

Ingredients:

  • 3 medium organic bananas
  • 3 organic, pasture-raised eggs
  • 3 Tbs of organic coconut oil
  • 1/2 cup of organic maple syrup or raw honey
  • 2 tsp of organic vanilla extract
  • 1 tsp of baking soda
  • 1/2 tsp of pink himalayan salt or sea salt
  • 2 1/2 cups of almond flour
  • 2 Tbs of coconut flour
  • 2 tsp of cinnamon
  • 1/2 cup of organic shredded coconut flakes

Method:

  • Preheat your oven to 350°F
  • Line your 9×5 inch breadpan with parchment paper or grease with organic coconut oil
    • Personally I prefer lining with parchment paper so that clean up is super quick
  • Peel your bananas, place in large bowl. Use a potato masher to mash the bananas until there are no more large pieces.
  • Break the eggs in a small bowl and beat until they are fluffy.
  • Add the coconut oil, organic maple syrup and organic vanilla extract to the bowl with the bananas.
  • Mix the eggs into the bowl with the bananas and wet ingredients.
  • Slowly add the baking soda, pink himalayan salt, almond flour, coconut flour, cinnamon and the organic shredded coconut flakes into the bowl with the bananas and wet ingredients.
  • Mix the wet and dry ingredients until the batter is thick and smooth.
  • Pour the batter into the breadpan. Bake for 50 minutes at 350°F. Then bake for 10-15 minutes at 250°F until a toothpick comes out moist but without batter.
  • Let the bread cool for 15 minutes, then enjoy with friends and family!
